Oatmeal Raisin Cookies

For dessert, we made Oatmeal Raisin Cookies in the South Arm Women Community Kitchen.

These cookies are soft and chewy and soft fresh from the oven and turned crispy when cooled.

Green tea is so good for you that it’s even got some researchers raving.

“It’s the healthiest thing I can think of to drink”, says Christopher Ochner, PhD. He’s a research scientist in nutrition at the Icahn School of Medicine at Mount Sinai Hospital.

Of course, no one food will protect you from disease. Your health is wrapped up in your lifestyle and your genes, so even if you drink green tea all day long, you also need to take care of yourself in other ways, like not smoking, being active, and eating a healthy diet.

Green tea’s biggest benefit? “It’s all about the catechin content,” says Beth Reardon, RD, a Boston nutritionist. Cathechins are antioxidants that fight and may even prevent cell damage. Green tea is not processed much before it’s poured in your cup, so it’s rich in catechins.”

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup dark brown sugar, firmly packed
  • 2 large eggs
  • 2 teaspoons vanilla
  • 3 cups rolled oats
  • 1 1/2 cups raisins or cranberries or chocolate chips (or combinations of them)

Instructions

IMG_3227Preheat oven to 350 degrees F.Whisk together flour, baking soda, baking powder and salt; set aside.
IMG_3232Combine butter, sugar, brown sugar, eggs and vanilla and mix with a mixer on low.
IMG_3235To cream, increase speed to high and beat until fluffy and the color lightens.Stir the flour mixture into the creamed mixture until no flour is visible. (I forgot to get a picture of this step).Over mixing develops the gluten, making a tough cookie.
IMG_3242Now, add the oats and cranberries/chocolate chips; stir to incorporate.
IMG_3248Fill an ice-cream scoop and press against the side of the bowl, pulling up to level dough (to measure 2 tablespoons of dough).Drop 2-inches apart onto baking sheet lined with parchment paper or sprayed with nonstick spray.Bake 11 to 13 minutes (on center rack), or until golden, but still moist beneath cracks on top.Remove from oven; let cookies sit on baking sheet for 2 minutes before transferring to a wire rack to cool.
