Minoo shared a Lemon Loaf with Poppy Seeds to complete a meal of Caldo Verde and healthy Rice and Spinach Croquettes.

These Lemon Loaf with Poppy Seeds is great for tea break.
Ingredients
- 1 cup sugar
- 1/2 cup butter
- 2 eggs
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- rind (finely grated) and juice of 1 lemon
- 1/2 cup milk
- poppy seeds

Instructions
Preheat oven to 350 degrees.
Cream butter and sugar together. |
Beat eggs in a measuring cup.
Add milk and mix well.
Add milk mixture to sugar mixture a bit at a time while mixing on low. |
Combine dry ingredients in a bowl (no shifting required).
Add lemon rind and stir to mix. |
Add wet ingredients into dry ingredients and stir to mix. |
Add poppy seeds and stir to mix. |
Grease and dust loaf pan with flour and knockoff excess flour. |
Scoop batter into loaf pan.
Bake in a 350 degrees oven. The time depends on the size of the loaf pan.
A 9″ x 5″ loaf pan will require 1 hour baking time while muffin tin will require 20 to 25 minutes. |
Remove from oven and cool for 5 minutes. Prick crust with a fork and drizzle with lemon juice (or brush lemon juice on with a pastry brush).
Allow loaf to stand for 30 minutes before removing from pan. |
